For a healthy, easy-to-prepare dinner, here is a tasty menu idea:
Salmon with black garlic, fresh Swiss chard, and Basmati rice with white balsamic vinaigrette.
Salmon is easy to prepare and can be done in a number of simple ways that are equally delicious.
For broiling, brush a small amount of oil on a cookie sheet, place salmon on it, and squeeze top of fish with lemon or lime juice. Dust top with dill weed or salt and pepper, to taste. Broil for about five minutes, then flip with a spatula, and broil for a few minutes more. Test for whether it’s done with a fork: if it flakes easily, it’s done. If it doesn’t flake and still looks translucent, broil for a couple of minutes longer.
Or you can poach salmon on your stove top. Put salmon in a small frying or saute pan with about an inch of water, and bring to a boil. Add a fresh squeeze of lemon or lime juice to the water, and add a little white wine, if desired. Put a lid on the pan, lower the heat, and let poach for about five minutes. Then check for doneness, as above.
When your salmon is cooked, sprinkle several black garlic bulbs on top, to taste. Serve with steamed Swiss chard and Basmati rice that’s dressed with white balsamic vinaigrette. Healthy, fast, delicious!
