It doesn’t have to be a Tuesday to enjoy tacos! Here is a recipe for refried black beans with Quarter Moon Farm’s organic black garlic. The addition of the black garlic gives the flavor an extra special kick.
Ingredients
- 15-ounce can black beans (do not drain can)
- 1/2 cup chopped onion
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 3 to 6 black garlic cloves, chopped, to taste
- salt, to taste
- chopped cilantro, optional
- freshly squeezed juice of 1 lime, optional
Directions
- Heat 2 tablespoons olive oil in frying pan.
- Add chopped onion and and spices; sauté until onions are translucent.
- Add black garlic and sauté and additional minute or two.
- Add beans with their liquid to pan and cook for 5 minutes, stirring frequently.
- Mash beans in pan, or put entire mixture into food processor until desired texture is reached, adding more water as needed.
- Add salt, to taste.
You can add chopped cilantro and fresh squeezed lime juice to the beans at this point, if you wish. Build your tacos with the beans as the base in the taco shell. Then add shredded lettuce, chopped tomatoes, olives, avocado, salsa, and shredded cheese. Enjoy!
