Ingredients
- 450g bread flour
- 300g sourdough starter (fed 12 hours prior)
- 10g sea salt
- 230g warm water
- 3 bulbs black garlic
Directions
- In a mixing bowl, add bread flour, sourdough starter, sea salt, and warm water.
- Mix on low speed for 10 minutes to develop elasticity; for the last 15-20 seconds, add black garlic.
- Cover mixing bowl with shrink wrap and let rest for 20 minutes.
- On a lightly floured table, remove the dough from the mixing bowl and shape loaf. Place seam side up in a proofing vessel. Proof in oiled bowl or floured proofing basket for 6-7 hours at room temperature (68-72 degrees, Fahrenheit).
- After proofing for 6-7 hours, preheat oven to 450 degrees Fahrenheit. Gently turn out the dough onto the preheated baking stone with the seam side down. Score the bread with a razor or very sharp knife. Steam oven (generously spray with a hand mister or add one cup of water to the bottom deck of the preheated oven).
- Bake for 35-40 minutes at 450 degrees.
- Remove from oven and place on cooling rack. Allow to cool for at least 1 hour before slicing.

Extra items you may need: baking stone, mixer, bench scraper, water for steaming, flour for dusting.
