You may have heard of the Logan Moffitt, the ‘Cucumber Boy’ from TikTok; he makes oodles of cucumber creations, usually shaking all the ingredients together. Yes, shaking. This recipe is a twist on what he makes with a cucumber and peanut butter. It’s a delightfully delicious, refreshing, and nutritious salad.
Use a mandoline vegetable slicer for the cucumber, because it can be sliced into very thin rounds that way. After you slice the cucumber, drain off any liquid so that the salad won’t become too watery. Use a medium-sized cucumber so that its seeds are not very large; this will also prevent the salad from becoming watery. Or use English cucumbers, as they have fewer seeds.
Ingredients
- 1 cucumber
- 2 heaping Tablespoons peanut butter
- 2 Tablespoons soy sauce or tamari
- 1 Tablespoon rice wine vinegar
- 1 Tablespoon sesame seeds
- 1 teaspoon toasted sesame oil
- ½ teaspoon chili powder
- 5 cloves Quarter Moon Farm Black Garlic, chopped
- Salt & pepper, to taste
Directions
- Slice cucumber into rounds as thinly as possible.
- Drain off any liquid, and place in a mason jar or medium-sized bowl with a lid.
- Add the rest of the ingredients, cover jar or bowl, and shake vigorously.
This makes a great side salad for two people.
